目的 了解某市餐饮食品安全状况,为制定食品安全监管措施提供科学依据。方法 2014~2015年,在蚌埠市辖区内的生产和餐饮环节抽取食品进行检测,并对检测数据汇总分析。结果 2014~2015年蚌埠市抽检餐饮食品安全样品571批次,不合格74个批次,不合格率为12.96%;生产环节抽检319个批次,不合格37个批次,不合格率为11.60%,不合格项目包括标签、大肠菌群、甜蜜素、霉菌和过氧化值等;餐饮环节抽检252个批次,不合格37个批次,不合格率为14.68%,不合格项目包括菌落总数、馅料含量、纳他霉素和大肠菌群等。结论 蚌埠市食品安全总体状况良好,食品安全基本符合国家对食品的要求,部分抽检样品不合格,需进一步加强对重点食品和重点批次的监管,预防食品安全事故的发生。

Objective To understand the food safety of catering foods in Bengbu city, so as to provide the scientific basis for the safety supervision measures of food safety, and improve the quality of catering foods. Methods To analyze the sampling result of the food in Bengbu city from 2014 to 2015. Results A total of 571 batches of food were sampled from the city, and 74 batches were unqualified, the unqualified rate was 12.96%. 319 batches were sampled from production process, and 37 batches were unqualified, the unqualified rate was 11.60%. Unqualified items included tags, Escherichia coli, sweet essence, mould and peroxide value. 252 batches were sampled from catering, and 37 batches were unqualified, the unqualified rate was 14.68%. Unqualified items included total number of colonies, fillings content, pimaricin and coil group. Conclusion The general situation of catering food safety in Bengbu was good, which could meet the national food requirements. Some batches were unqualified, so strengthening the supervision of key foods and key bathes is necessary for preventing the food safety accidents.
